Bok Choy and Dumplings In Lemongrass Broth

I make the broth ahead, then all I need to do is bring some broth to a boil, add dumplings or wontons, and baby Bok choy, and voila! Soup is ready in minutes.
Best part, you can make a single serving at a time, making it a perfect workday lunch.
Use fresh, or frozen dumplings or wontons with your choice of filling; vegetable, chicken, or pork.

Ingredients
- 2 cups lemongrass broth
- 6-8 wontons or dumplings
- 2 -3 baby Bok choy
Instructions
- Trim the stems off the baby Bok choy, separate the leaves and rinse.Cut the larger outside leaves in half lengthwise. Set the Bok choy aside
- Bring the broth to a boil in a medium saucepan. Add the wonton or dumplings to the broth and let cook until they rise to the surface, about 3-5 minutes.
- Add in the Bok choy and cook for another 1-2 minutes. The leaves will be wilted, and the core will be crisp/tender.
- Split the wontons and bok choy between two bowls and pour the broth overtop.
- Serve with garnishes of your choice; fresh cilantro, quartered limes, sliced Thai red chili, finely sliced green onions, sriracha sauce.
