There is nothing I love more than a big bowl of homemade soup and a piece of crusty bread on a cold winter day.
Homemade soups were a staple in my mom’s kitchen, especially in the fall and winter. In the early fall there would be lots of vegetable soups made with a mix of the last of the fresh vegetables from the garden, and ones she froze. As we moved into winter the soups became heartier like her French-Canadian Pea soup made from the same recipe she grew up with.
I find making soup calming and a bit of a stress reliever. It doesn’t hurt knowing that there will be a delicious bowl of comfort food waiting at the end either!
In the fall and winter Sundays are my designated soup day. I always make a big batch, so we are set for lunches for the week to come. All we need to do is pop a bowl full in the microwave and we are good to go.
I’ve rounded up ten of my favorite soup recipes that are sure to warm you up even on the chilliest winter day.
Check them out, you are sure to find one (or two or three) that is exactly right for you.
Moroccan Spiced Vegetable and Chickpea Soup
This is my favorite vegetable soup recipe. It’s hearty, healthy, vegetarian and gluten free. The harissa spice blend gives this soup some heat and a complex, earthy flavour.
Lots of fresh herbs make this quick and easy soup something special. Use fresh tomatoes and red peppers when in season, or good quality canned tomatoes and store bought roasted red peppers in the dead of winter.
A family favorite, this delicious traditional French Canadian style soup is made with yellow split peas carrot, celery and onion, cooked low and slow with a ham-hock for a hearty soup that is perfect for lunch or dinner.
Not only is borscht delicious, it’s also really, really good for you! Beets, cabbage and root vegetables and a flavourful homemade broth combine to make an incredible tasting, hearty soup.
Thick and satisfying, it works as a soup or as a stew when served with rice. Either way you will want to have your favorite flatbread on the side to mop up every last drop.
A delicious Italian style soup that is loaded with creamy beans, tender pasta, and lots of vegetables.Keep it vegetarian or make it with spicy sausage, pancetta or bacon, or for an even heartier version use ground beef or pork.
If you like a good chili, then you are going to love this hearty black bean soup flavoured with chipotle and ancho chili powder. It’s delicious on its own or served with your favorite garnishes.
