Lemon Blueberry Frozen Yogurt Bars

A delightful summertime treat that blends citrusy brightness and berrylicious goodness. And the best part? They are incredibly easy to make!

Ingredients

  • 250 ml fresh blueberries
  • 150 ml roughly chopped toasted hazelnuts.
  • 500 grams lemon flavoured Greek yogurt full fat for a creamier texture
  • 15 ml honey optional, adjust to your preferred sweetness
  • zest of ½ a lemon

Instructions

  • Mix & Fold: In a large mixing bowl and combine the Greek yogurt, ½ of the blue berries and hazelnuts, the lemon zest, and the honey if you are using.
  • The Pour & Sprinkle: line an 9x9-inch baking dish lined with plastic wrap allowing for a bit of overhang for easy removal later on. Pour the yogurt mixture into the dish, spreading it out evenly. Sprinkle the remaining blueberries and hazelnuts evenly over top, gently pressing them into the yogurt mixture.
  • Freeze & Set: Place in the freezer and leave until firm, about 3 hours.
  • Serve & Indulge: Once frozen, cut, or break into pieces and store in an airtight container in the freezer. They will keep well for up to a month.

Notes

If you can't find lemon flavoured Greek yogurt,  stir in 15 -30 ml of lemon juice into your favorite plain Greek yogurt.
