50mlchia seeds
80mlpure maple syrup
120ml unsweetened applesauce
255gramsrolled oats (not instant)
5mlbaking powder
7.5mlground cinnamon
2.5ml ground ginger
.625mlground nutmeg
2.5mlpure vanilla extract

250mlpeeled and chopped apple
125mlchopped walnuts or pecansoptional
Instructions
Preheat oven to 177°C / 350°F Oil or spray a muffin pan with nonstick spray.
In a large bowl, mix together the oats, chia seeds, baking powder, salt and the spices. In a separate bowl, whisk together the almond milk, apple sauce, maple syrup and vanilla until well combined. Add the liquid mixture to the dry ingredients and using a spoon or spatula, stir to combine. Next fold in the apple and nuts (if using). The batter will be a little liquidy. Spoon batter evenly into muffin cups, making sure both the oats/apples and liquid are in each. Fill all the way to the top.
Bake for 28-30 minutes or until the edges are lightly browned and top appears set. Note: If the tops are browning too quickly, tent a piece of aluminum foil over the muffin pan.
Allow to cool for 5-10 minutes before serving. The oatmeal cups will keep refrigerated in an airtight container for 1 week. When ready to eat rewarm in the microwave for 30 - 45 seconds.
